Stuffed Pepper Soup Recipe
This soup uses a mixture of onions, rice, paprika and beef. And for beef, I highly recommend you use 90% lean beef. This will produce a taste without all the fat. Ingredients
- 1 tbspn olive oil
- 1 pound ground beef
- 3/4 cup onion (chopped)
- 1 1/2 tspns garlic (minced)
- 2 cups cooked white rice
- 2 parsley tbspns (chopped)
- salt and pepper
- 1 red bell pepper (cut into 1/2 inch)
- 1 green bell pepper (cut into 1/2 inch)
- 1 can petite tomatoes (diced)
- 1 can tomato sauce
- 1 can beef broth
- 2 tspns Italian seasoning
- First, use a large saucepan and medium heat, heat the olive oil.
- Add ground beef, cook for 5-6 minutes, use a spatula to crush ground beef.
- Add the onion to the pan, cook for 4-5 minutes, add the garlic, cook for 30 seconds.
- Seasoning a mixture of beef and onions with pepper and salt.
- Put the peppers in the pan, cook for 2-3 minutes.
- Add tomato sauce, beef broth, tomatoes, Italian seasoning to the pan, then bring to a boil.
- Cook for 15-20 minutes.
- Stir in the rice and seasoning the soup with pepper and salt, don't forget to add parsley on top.
