We love this light couscous salad — it doubles as a side, can be the main event or works well topped with grilled chicken or Adam’s favorite, shrimp! With lots of texture from crisp cucumber, sweet tomatoes, crunchy nuts and raisins, this is certainly one of our favorites. You can even make it ahead of time. YOU WILL NEED

• 1 1/2 cups dried Israeli couscous, also called pearl couscous
• Salt and fresh ground black pepper
• 1/4 cup extra-virgin olive oil
• 1 teaspoon Dijon mustard
• 1/2 teaspoon honey
• 1 teaspoon finely grated lemon zest
• 2 to 4 tablespoons fresh squeezed lemon juice, depending on taste
• 1 medium English cucumber, diced
• 1 large tomato, diced
• 1/2 cup coarsely chopped fresh herbs; use any combination of fresh parsley, cilantro, basil, dill, or mint
• 1/4 cup chopped walnuts, toasted
• 1/4 cup raisins, we love golden raisins

DIRECTIONS

• Bring a large saucepan of salted water to a boil. Add couscous and cook until tender, 8-10 minutes. Drain.

• While the couscous cooks, in a large bowl, whisk the oil, mustard, honey, lemon zest, lemon juice, 1/2 teaspoon of salt, and 1/4 teaspoon pepper. Add the drained couscous to the dressing and mix well.

• Stir in the cucumber, tomato, herbs, walnuts and raisins. Taste for seasoning and adjust with salt and/or pepper as needed. Enjoy warm or cover then refrigerate until cool, about 1 hour.

• If you cannot find Israeli Couscous, you may substitute with a small pasta shape such as orzo or use regular couscous.
• To toast walnuts, add to a dry pan over medium heat. Cook, stirring frequently until the nuts turn golden brown and become fragrant, 5 to 10 minutes.
• Make-Ahead: This salad is delicious when eaten straight away, but you can also make the salad, cover it and refrigerate for up to 4 hours. This way all the flavors marry and mingle, making for an even more delicious salad. If you are planning to make a day or two ahead of time, keep the tomatoes and walnuts separate until you’re ready to serve. This way they will remain crisp.

•  1-2 (15 oz.) cans chickpeas, drained
•  1 small bunch Italian parsley, chopped
•  1 recipe Apple Cider Vinaigrette
•  1 avocado

INSTRUCTIONS

1. Cook quinoa according to package directions (or see Instant Pot directions in post). Transfer to a bowl and let cool at room temperature or in the refrigerator.
2. Place the chopped spinach in a salad bowl. Top with the quinoa, onion, pomegranate arils, cucumber slices, chickpeas, and parsley. Toss to combine.

Ridiculously Easy Recipe Thai peanut sauce is slightly spicy, made in the blender and doubles as a dressing. You can add it to stir-fries, noodles, salads and satay!

It never fails. Every year when the temperatures begin to warm, I ask you salads. My Costco-copy soft kale salad is really good, and so is the Caesar salad with homemade dressing Panzanella. But this time I want something very specific: chicken salad with Thai peanut sauce.

If the sauce is the star of the show (which this magic sauce Thai peanut is DEFINITELY), I do not want a mediocre sauce. I wanted a sauce so good you could not help but lick the spoon.


I wanted a sauce that could double as a sauce or dressing. You know the kind I'm talking, right? Where there is thin enough to work in some crunchy vegetables and get a dressing-solid cover, but thick enough to withstand dip spring rolls or pieces of grilled chicken.

Yes, and I wanted a Thai peanut sauce that will amaze you too, and you feel like there was an explosion of flavor in your mouth with every bite.

I wanted peanut tang + + + soft depth with every hollow, every crisis, every bite of everything I ate.

And it's there!

THAI PEANUT SAUCE INGREDIENTS
Do not be fooled by the long list of ingredients. You hold everything in the blender and whip it in about a minute. (I use this mixer.)

And just for the record, each ingredient is needed. I tried it and reduce bedrock and the results were not nearly as good.

For best results, I use:

• Peanut Butter
• Rice vinegar
• Lime juice
• Olive oil
• The soy sauce (I use it, the use of liquid aminos tamari if you are gluten free)
• Salt
• powdered chillies
• fresh ginger
• Garlic
• Sugar
• Honey (or maple syrup)
• Coriander

Note that I'm not using fish sauce or sesame oil. I love the two ingredients, but this recipe is perfect without them!

THAI PEANUT SAUCE MAKING
It is very simple:

1. Add all ingredients in a blender or food processor EXCEPT cilantro.
2. Once it is creamy, add the cilantro and pulse until cilantro is in small pieces.
3. Use your dressing on your salad or meal and voila!

PUT MAGIC THAI PEANUT SAUCE ON SALAD
One of my favorite ways to use Thai Peanut Sauce is a Crunch salad, which is basically a bunch of chopped crunchy vegetables in a bowl.

You can make your own salad Crunch starting with 4 cups Napa cabbage into thin slices (which is much milder in flavor than the typical green cabbage) and adding 4 cups crisp vegetables. Some examples:

1. Matchstick carrots (use a julienne peeler to cut them quickly!)
2. Pepper (I suggest red, orange or yellow for sweet flavors)
3. English cucumber (seeded)
4. broccoli stalks (buy the lot and use the flowers in sauce Alfredo easy home!)
5. Brussels sprouts sliced
6. radish Matchstick
7. Mix / match with what you have, what is selling, what is in your garden and what your family likes. Once you top this with peanut sauce Thai, your people will forget they eat a large bowl of vegetables.

And of course you can with chicken on top a boost in protein.

All chicken will do, but I recommend crockpot purpose chicken, especially in summer. All the benefits of having the chicken ready for your favorite dishes without having to heat the house!
