Homemade Mexican Meatball Soup
Mexican Meatball Soup or Albondigas Soup is a meatball soup filled with vegetables, very tasty, and warm. This soup uses several vegetables, such as potatoes, carrots and zucchini.
Making soup almost every week, that's a good idea. You will give kindness to your family, if you already have children, it will certainly be a very good moment. There are lots of inspirational soup dishes you can make, but, one of my favorite soups is Mexican Meatball Soup.
Mexican Meatball Soup or often called Albondigas Soup, is a soup that uses the main ingredient of Meatballs, to make it warmer and healthier, people often serve this dish along with vegetables, such as carrots, zucchini and potatoes. If interpreted, Albondigas Soup in Spanish means "Little Meatballs". This soup is very tasty and easy to make, although it uses more ingredients than other detox soups, but this soup is more worth it.
The first thing you have to prepare is meatballs, you can make your own meatballs, but, if you want a faster one, you can buy meatballs at the supermarket.
Homemade Mexican Meatball Soup
If you want to make your own meatballs, you can use a combination of several ingredients, such as lean beef, garlic, rice, cumin and coriander, when you mix the mixture, make sure to stir it evenly. After that, shape the meatballs into small balls, then put them in the soup mixture.Ingredients
For the meatballs
- 1 pound ground beef
- 1/2 cup cooked white rice
- 1 tspn minced garlic
- 1/4 tspn pepper
- 1 egg
- 1/4 cup of cilantro leaves (chopped)
- 1 tspn ground cumin
- 3/4 tspn kosher salt
- 2 tspns olive oil
- 1/2 cup onion (diced)
- 1 tspn garlic (minced)
- 3 carrots peeled (sliced)
- 1 1/2 cups Russet potatoes peeled (cut into 1/2 inch)
- 6 cups beef broth
- 1/4 cup cilantro (chopped)
- salt and pepper
- 15 ounce can diced tomatoes (Don't drain)
- 8 ounces can tomato sauce
- 1/2 tspn ground cumin
- 1/2 tspn dried oregano
- 1 large zucchini (sliced)
- To make meatballs, use a large bowl, place beef, garlic, rice, eggs, cilantro, pepper, salt and cumin in the bowl. Mix everything until smooth.
- After that, make the meatball mixture into small balls.
- Place the meatballs in a container.
- Start making soup, first, use a large saucepan, heat the olive oil, and use medium heat, add carrots and onions, cook for 3-4 minutes.
- Add the garlic and cook for 30 seconds.
- Add beef broth, potatoes, tomato sauce, tomatoes, oregano and cumin in the pan, then simmer for 10 minutes.
- After that, add the meatballs and boil again for 10 minutes.
- Add zucchini, cook again for 5 minutes, seasoning the soup with pepper and pepper, after that, sprinkle with chopped coriander, serve on the table.
